Baked, fried, spiralised or just raw, you gotta love the humble Courgette (a.k.a Zucchini if you are American). It’s such a versatile vegetable and the possibilities are endless. I absolutely love them.
My favourite however, are these amazingly simple Baked Courgette Fries. Oven baked to crunchy perfection, this healthy snack is perfect with a burger or just on it own. I often find myself making this when I am craving French fries or something a little bit naughty.
To make these beauties, you will need –
- 2 Courgettes
- 2 Eggs
- 25g Bread Crumbs
- 12g Grated Parmesan Cheese
- Salt and Pepper (to taste)
- Cooking Spray
Start by preheating the oven to 220 degrees C (425 degrees F). Line a tray with a slightly greased baking sheet and spray some oil onto the sheet. Once done trim the ends of the washed courgettes. Cut them into 2 inch strips and cut each section into 4 pieces.
Set the courgette aside and beat the two eggs in a bowl and season with some salt and pepper. In another bowl, mix the bread crumbs and the grated Parmesan cheese to create your production line.
Dip each piece of courgette in the egg mixture. Shake to remove any excess and roll the eggy courgette in the bread crumb, Parmesan mixture until it is finally coated with a thin layer of the mixture.
Transfer each coated courgette onto the baking sheet and move on to the next one till you have a tray full of them.
There is something really satisfying about this task. I often find myself getting into the ‘zone’ – the monotonous rhythm of coating each egged courgette in the breaded Parmesan mixture is very satisfying. You can always recruit your significant other, children or even friends into the production line to make this more fun (and speed things up).
Pop the tray into the preheated oven for 20 to 25 minutes until they turn golden and crispy. Don’t forget to turn them half way through so that they bake evenly.
Take out of the oven and enjoy! It doesn’t get simpler than this.
They go perfectly with a splash of balsamic vinegar and a dollop of Dijon mayonnaise – this combination is literally the dream. Although they are great on their own too.
