As you probably have figured out by now, I am a big fan of sausages. I love sausages and how versatile they can be for cooking. Nothing beats a few grilled pork sausages for breakfast but if you fancy taking it to the next level, these Sausage Danishes are exactly what the doctor ordered.
This is a recipe from one of my favourite cookery books – eat by Nigel Slater. I absolutely love Nigel Slater’s recipes. They are easy and simple and these sausage danishes are no different!
They are there perfect combination of meaty pork sausage and glorious puff pastry! Looks amazing right?
To make these sausage danishes, you will need –
- 375 grams Puff Pastry
- 400 grams Breakfast Sausages
- 1 Beaten Egg
- 1 tablespoon Fennel Seeds
Yes that’s all you need! Told you it was a simple recipe. This easily makes 8-10 sausage danishes.
Start by heating the oven to 200′ C/Gas 6. If you time it perfectly, your sausage danishes will be ready to bake by the time the oven heats up.
Remove the skins from the sausages. This can be easily done by scoring the skin from one end to another and it should easily peel away. Sausage meat tends to be well seasoned anyways but if you want to give it an extra zing, feel free to add some extra seasoning to it. I decided to add some garlic pepper and mixed herbs to the sausage meat and mix well.
Lightly flour a pastry board or a working surface and carefully roll out the puff pastry to a rectangle shaped 30cm x20 cm. Spread the seasoned sausage meat over the pastry, leaving a small border around the edges.
Scatter over the fennel seeds on the spread out sausage meat. Now lightly bush the edges of the pastry with a little beaten egg.
I love taking my time brushing the edges of the pastry with the beaten egg – its so relaxing!
With the long edge facing you, roll the short sides of the pastry on both sides till they meet in the middle. Brush with some more beaten egg and lightly press the roll together.
Now cut the roll into 8-10 thick slices and place these flat on a slightly buttered baking tray and brush the pasty with even more beaten egg – its give the pastry the beautiful golden glow once baked.
Bake in the pre-heated oven for 12-15 minutes till the pastry is puffed and golden.
And there you have it – Sausage Danishes! Simple, easy and ready in less than 20 minutes! Now dig in!
