I love a good one dish recipe.
Sometimes you just want to throw everything into a dish and let it cook while you crack open a bottle of wine and relax in front of the TV. This recipe is my answer for exactly that situation!
Sticky Soy Chicken – healthy, delicious and oh so easy!
You know what makes it even better? Not a lot of ingredients!
To make Sticky Soy Chicken, you will need –
- 150 ml Oyster Sauce
- 3 tablespoons Light Soy Sauce
- 3 tablespoons Light Muscovado Sugar
- 3 Spring Onions
- 3 Garlic Cloves
- 1 teaspoon Chilli Powder
- 5 Chicken Pieces (preferably thighs or breasts)
This should easily serve 3-4 people. You can always refrigerate the left overs and use them the next day. They make a killer sandwich filling!
Start by pouring in the Oyster sauce and the soy sauce into a bowl.
Add the muscovado sugar and the chilli powder
Add the finely chopped spring onions and garlic.
The marinade for the chicken is ready. Told you this was easy.
Arrange your chicken in an oven proof baking dish. I am using boned chicken thighs with its skin on here, but feel free to use boneless skinless chicken if thats what you prefer.
Pour the marinade over the chicken making sure you coat the chicken evenly.
Get stuck in tossing the chicken in the marinade. It’s always better to use your hands to make sure the chicken is evenly coated.
And you are almost done. The smell of the soy sauce blended in with the muscovado sugar is absolutely amazing.
Bake this in the oven at 200’C (Gas 6) for 20 minutes.
Take the dish out after 20 minutes and baste the chicken with the sauce its cooking in. This is important to make sure the chicken remains moist during the cooking process.
You can see the chicken starting to get a fine coat of the sauce – we need to intensify this coating. Return this to the oven and cook for another 15-20 minutes. Keep an eye on it though as the chicken burns easily.
Garnish with some chopped spring onion and it’s ready. Sticky Soy Chicken!
You can serve this with whatever you fancy – rice, bread or the chicken on its own. I usually serve the chicken with a side of watercress seasoned with some of the sauce the chicken cooked in. Gorgeous!
